...interview outcome, cake and travels...

I gave Mat the responsibility of posting about his interview, but....he has left it up to me. Overall, the interview went very well (according to Mat) and now it's a waiting game. We should hear in the next week or so whether he is in or on to new adventures... He said it was great to "breathe the Texas air", but definately was an extremely long day. He flew down to Houston and arrived home after midnight...however, now it's all about waiting...

In the meantime of waiting on the phone call/email/correspondance...we are trying to keep busy! Mat is trying to finish his instructor's ratings along with keeping up on his school work. I'm taking a short break from school (only a few weeks to get passed all of our upcoming travels), but still working full time.

I've also thought of all the crafty projects that I wish I had time to do and now...I am hoping to complete them all! I've been baking a little here and there...my favorite lately seems to be Apple Pie A La Mode Cake. I adapted it from a Rachael Ray recipe from years ago.(This is especially for Mrs. Heidi H, who has asked for my recipes or at least to put them on my blog...so here you go, girl!:) )

1 yellow cake box mix (make according to box directions)
1-2 Apples (chopped in small cubes - peeling is optional)
Cinnamon & Sugar

Pour cake into desired pans, muffin liners, loaf pans (whatever you'd like!). Mix apple cubes with cinnamon & sugar, until all apple pieces are coated. Top cake batter with apple cubes and bake according to box directions. (You might need to bake it an extra 5-10 minutes more than what the box suggests.)

Vanilla ice cream is the best topping! You can also use whip cream, but really...ice cream is the best! It is such a easy, yet yummy treat!

We have a few upcoming trips that we are so excited for! We definately could use a break - so a quick weekend trip to Oregon and a week in Texas all in the upcoming month will be enough to hopefully tie us over for a while.

Off on a Jet Plane & comin' clean

I just sent Mat off on a jet plane...or at least in his car to head to the airport to be off on a jet plane. :) He's heading to Houston for his interview and honestly I think I am more of a nervous wreck than he is! Ha ha! So to keep myself occupied (since it's almost 7am and I can't get back to sleep), I thought I'd blog. However, trying to come up with something this early is harder than I thought so I am going to fulfill this "honest scrap" tag that a dear friend, Tennille passed on. :)

Background: you have to post 10 honest things about yourself and then tag 4 friends...yes, 4 friends...let's see who actually reads our blog. :)

1. I would give anything to hang out in my jeans, a t shirt and a ponytail with no make-up rather than be dressed up any day!

2. I love to read magazines over books. Don't get me wrong, I don't mind books, but I usually feel I don't have the time to read them and yet feel the need to read a magazine cover to cover right after I buy it.

3. I can have a completely destroyed craft table. We're talking papers piled up, random items (not even craft related), you name it all over my craft table/space and I can be completely ok. But if the house is messy anywhere else...kitchen, living room, bathroom I HAVE to clean it. Mat gets frustrated with this one :) he he he.

4. I forget my phone is on silent almost ALL of the time. I put it on silent for work and have the worst time remembering to turn the ringer back on. I'm not ignoring anyone or just to busy to answer my phone...my ringer is just off - but leaving a voicemail or text is always helpful!

5. This is a given, but I LOVE to bake, cook, create....but this is not widely known...I hardly try anything I do bake, cook or create. Mat's my taste tester! (Exception, dinners and the truffles from Valentine's Day...Oh My!! I think I ate a WHOLE batch myself!!!)

6. I have been working on a cookbook for over a year now, mainly for family, friends and myself, not to publish....it's not even close to being done. I keep adding more and more to it so I don't think it will ever be done!

7. I buy clothes in bulk to "save time". When I find a shirt or jeans I like...I buy two or three at a time in different colors. Which it doesn't really "save time" because the next time I go shopping I do the same thing so I end up with lots of clothes!

8. I used to collect coffee cups/mugs. It didn't matter where I was, if I saw a cute coffee cup or mug I had to get it! I had a HUGE hard rock cafe one and another HUGE Goofy one, then there was the polka dots, stripes, swirls of all sorts of colors! They have since been donated to my mom and sister since I couldn't really pack them to move with.

9. Now I collect SOCKS! I have all different colors/holiday themed/styles...

10. My all time favorite scent is apples and ironically, my most favored color is green. I would have everything apple scented if I could...my car, my house, you name it! My all time favorite perfume is even DKNY Be Delicious which comes in an apple shape and has the bottle colored green!

What we've been waiting for!!!

The phone call came in!!!

Yesterday, Mat received a phone call from.....

He flies out to Houston, Texas March 18th for the internship interview!!!

Please pray for us, this is an unbelievably amazing experience that could help in so many ways for Mat's career, prayers would be greatly appreciated!
